I really enjoy this dish, and have been making it now at home, though without the cheese.
Ingredients
chayote squash – mine are about 10oz each – so for this recipe say 2
green onions – 6
1 small garlic clove – smashed
salt and pepper
1/4 cup grated cheese
1/4 cup fresh curd – this is a very, very dry and hard curd in Bhutan
2 tablespoons vegetable oil to saute
Recipe
- Peel and core the squash. Slice very thinly.
- Clean the green onions and cut into 1″ pieces. Avoid the very dark green ends.
- Heat the oil to med-high and add the squash.
- Saute for a couple of minutes and add the salt and pepper. Note: Bhutanese tend to under salt, and this is a good way to go. Most especially if you will use cheese.
- When 1/2 done (still crisp) add the grated cheese & fresh curd (if you are using).
- Continue to cook until the cheese melts. Then stir gently.
- Add the onions and saute 1 more minute.
- Add the small garlic clove (smashed). Saute 1 minute more.
