Recipe 2 – Buckwheat Pancakes

Ingredients

buckwheat flour – they grind only when needed

water

salt

Recipe

  1. Add enough water to the flour and salt to make a thick, pour able batter. 2. Stir really well to be sure there are no flour lumps in flour bubbles. 3. Heat a small frying pan to a quite high heat – pan used to make pancake was about 6″. 4. Add a little vegetable oil. 5. Pour in some batter – enough to have the pan full and about 1/8″ deep. 6. Gently swirl the pan to move the batter out to the edges, as for an omelette or crepe. 7. As the pancake cooks gently lift and loosen it around the edges. 8. When you think browned, lift and flip the pancake. 9. Cook the other side. 10. Flip several times if necessary until cooked through.
